  8.  Kiwi Muffins -- From Granny's Muffin House by Susan Ashby, Beverly Hills, CA:

  11. 2 c flour
  12. 1 T baking powder
  13. 1/2 t salt
  14. 2/3 c sugar

  16. 1 egg, beaten
  17. 1/3 c butter, melted
  18. 1/2 c milk

  20. 1 T grated lemon rind
  21. 1 1/2 c peeled kiwis, chopped
  22. 3/4 c walnuts, chopped

  24. Preheat oven to 400 deg F.  Sift together the first 4 ingredients.
  25. Stir in the egg, butter, and milk, just until moistened.  Fold in the
  26. lemon rind, kiwis, and nuts.  Fill paper-lined muffin tins full, and
  27. bake approximately 20 minutes.  Makes 12 muffins.
